Lemon Pasta Salad
Chicken Gyros - 1 c plain Greek yogurt, 1 cucumber, 1 t garlic, 1 t white wine vinegar, salt & pepper, squeeze of fresh lemon juice, extra virgin olive oil. For the chicken: 2 t minced garlic, juice of 1 lemon, 2 t red wine vinegar, 2 T extra virgin olive oil 2 heaping T plain Greek yogurt, 1 T dried oregano, salt and pepper, 1 1/4 lbs. boneless, skinless chicken breasts. Assemble: Pita bread, diced fresh tomatoes, sliced red onion
